POTATOES PIE (TOURTE AUX POMMES DE TERRE)
Cooking time: 2h
Ingredients for 30cm pie dish (about 6persons):
- 2 puff Pastry
- 1.5kg of Potatoes
- 50cl of thick Sour Cream and a teaspoon of Salt
- 1 Egg yolk
- 1 smoked Sausage (Spanish or French can do)- Can be replaced with 250g of cheddar cheese for vegetarians.
Preheat your oven at 150C.
Remove puff pastries from freezer and shape it round (if not already).
Slice Potatoes in very thin slices, and the sausage in thin slices too.
Lay the first puff pastry in the pie dish,
Put half of the potatoes in the pastry then at the top the sliced sausage (or cheese), then put the other half of the potatoes slices.
Cover with the second puff pastry, and stick the two pastry together squeezing around the edge with your finger, then upturn the edge, squeezing again with your fingers.
Make a hole in the middle of the pastry with a knife.
Brush the egg yolk on the top of the pastry (this will golden the pastry while cooking)
Put in the oven for about 1h30. It cook slowly and the pastry has to golden but not burn (if needed put some cooking paper on the top)
Mix the cream with salt and some pepper and after 1h30 put the cream in the middle top hole slowly so it can get inside.
Put again in the oven for 20-30min depending on the potatoes (check with a knife through the hole if the potatoes are cooked).
