LA GALETTE DES ROIS
Preparation time: 30min
Cooking time: 20min
- 2 Puff pastries (about 280g each, make it round shape)
- 125g of Almond powder
- 125g of Brown sugar
- 125g of soft Butter
- 2eggs + 1egg yolk
- A tablespoon of Rum (optional)
- A Fève ( broad bean)
- A Brush
- Some cooking paper
Preheat the oven at 200C.
With a whip mix the soft butter and brown sugar until it’s all homogenous and spritzing.
Add the Almond powder, the 2eggs and the Rum, mix well.
Put some cooking paper on the oven tray and dispose the puff pastry on it.
Garnish the centre with the mix and lay out up to 2cm of the edge of the pastry.
Place the Fève anywhere inside!
Cover with the second puff pastry, and stick the two pastry together squeezing around the edge with your fingers, then upturn the edge squeezing again with your fingers.
Dilute the egg yolk with a little bit of cold water and brush it on the top of the galette.
Using a knife, draw stars on the top of it, then trick slightly the top with the tip of the knife to avoid it to swell to much.
Place the galette on the bottom of your oven for 30min (the top and bottom of the Galette has to be golden)
